Watermelon Arugula Salad

Ingredients

  • 3 cups Arugula
  • 1/4 cup Mint
  • 4 cups Watermelon
  • 1 Lemon, juice + zest
  • 5 oz Feta Cheese, fat-free
  • 3 TBSP Olive Oil
  • Dash of Salt
  • Pepper to taste

Preparation

  1. Slice watermelon into cubes
  2. Add olive oil, zest, and lemon juice to the bowl and mix
  3. Mix mint into a bowl
  4. Mix 2 oz feta cheese into the bowl
  5. Add Arugula to the bowl and toss the salad
  6. Add freshly ground black pepper and kosher salt to taste
  7. Top the salad with remaining feta cheese
  8. Enjoy!
