Tomato & Egg Tacos

As a part of our Good & Cheap & Healthy series, were taking on tacos! In the book, this recipe was sans tortilla. But, hey, we’re in Texas and we need our breakfast tacos! This recipe is very reminiscent of Eggs al la Mexicana, but easy enough for a special weekday morning breakfast! Check out our Facebook video for even more tips and tricks!

Tomato and Egg Tacos

Tomato & Egg Tacos

Ingredients

● ½ can Diced Tomatoes (any flavor) or 1 large fresh Tomato
● 5 Eggs
● 4 Corn Tortillas
● ½ Large Avocado
Cilantro for garnish (optional)
Salt & Pepper to taste

Preparation

1. Heat a nonstick pan and add 1 large, diced tomato or ½ can of diced tomatoes. Cook until the tomato juice all evaporates.
2. Crack 5 eggs, salt, and pepper into a bowl and whisk. Once the tomatoes juice is gone, lower the heat and add the eggs. Stir gently until finished cooking.
3. Warm 4 corn tortillas on another skilled, over the stove burner, toaster, or in the microwave. Add ¼ of your Tomato & Eggs to each tortilla, top with Cilantro (optional), and 1/8 of an avocado and Enjoy!

Tips

● Good tomatoes can be hard to find when they are not in season (Tomatoes are in season May-October). So, when you can’t find good fresh tomatoes, don’t be afraid to buy canned. They can be cheaper and pre-seasoned to make your morning routine that much easier. Just try and get the low sodium version, or if purchasing a flavor that does not have a low sodium version, don’t add salt to your eggs when cooking.
● Eggs cooked over low heat will form curds (or the lumpy parts) slower and come out “creamier”. Depending on how you like your eggs, adjust the temperature and amount that you stir them!
● If you don’t have avocado, use an extra egg instead!

Tacos de Tomate y Huevo

Ingredientes

● ½ lata de Tomates Cortados en Cubos (cualquier sabor) o 1 Tomate fresco grande
● 5 Huevos
● 4 Tortillas de Maíz
● ½ Aguacate Grande
Cilantro para la guarnición (opcional)
Sal y Pimienta al gusto

Preparación

1. Calentar una sartén antiadherente y añadir un tomate grande cortado en dados o una lata de ½ de tomates cortados en dados. Cocina hasta que el jugo de tomate se evapore.
2. Romper 5 huevos, sal y pimienta en un tazón y batir. 3. Una vez que el jugo de tomate se haya evaporado, bajar el fuego y agregar los huevos. Revuelva suavemente hasta que termine de cocinarse.
3. Caliente 4 tortillas de maíz en el comal, sobre el quemador de la estufa, el tostador o en el microondas. Añade ¼ de tus Tomates y Huevos a cada tortilla, cubre con Cilantro (opcional), y 1/8 de un aguacate y ¡Disfruta!

Consejos

● Los tomates adecuados pueden ser difíciles de encontrar cuando no están en temporada (Los tomates están en temporada de mayo-octubre). Así que, cuando no puedas encontrar buenos tomates frescos, no tengas miedo de comprarlos en lata. Pueden ser más baratos y pre-sazonados para hacer su rutina matutina mucho más fácil. Sólo trate de conseguir la versión baja en sodio, o si compra un sabor que no tiene una versión baja en sodio, no añada sal a sus huevos cuando los cocine.
● Los huevos cocinados a fuego lento formarán cuajadas (o las partes grumosas) más lentamente y saldrán “más cremosos”. Dependiendo de cómo te gusten los huevos, ajusta la temperatura y la cantidad que los revuelvas.
● ¡Si no tienes aguacate, usa un huevo extra en su lugar!
